Time in bourbon barrels changes everything, and Big Gin’s barreled edition trades the usual clear crispness for a warmer, oak-kissed character with a touch of amber color. The juniper is still there, now rounded out by the vanilla-and-caramel influence you’d expect from a good bourbon cask. It’s a natural in a barrel-aged Negroni or a gin old fashioned, and it sips surprisingly well over a single rock.
